Wanderlust Weekly: Congrats on the growth of Old Traditional Polish Cuisine! What inspired its creation? Eva Lokaj: The food truck was started by my husband, Grzegorz Gryzlak, and his friend Przemyslaw Motyka. I handle all of the catering, marketing and media relations - so it really is a "family business". In the recent years in NYC we saw a lack of what we were brought up with: Polish products, custom, culture, and great food!
We always wanted to promote Polish culture and food and we found that the best way to do this is via mobility. 

Wanderlust Weekly: You've built a strong community following in New York, what are some of your proudest moments? Eva Lokaj: Some of our proudest moments are 

- when first time customers come to check out our food because one of their co-workers bought lunch from our truck and it "looked and smelled amazing"! 
- when customers come to reminisce how their grandmother's or family used to make Polish food and this reminded them of their childhood
- being on blogs and TV because we are so unique:  examples:  Polish MasterChef, Dutch TV with Miljuschka Witzenhausen, NY Live TV with Lauren Scala

Wanderlust Weekly: The culinary field is constantly evolving, what upcoming news or developments can we look forward to? Eva Lokaj: We are looking to expand our catering services so that every office in Manhattan can get a traditional and authentic Polish lunch. Specials are always key: in addition to our main menu, we try and provide different Polish specials such as Hunters Stew (Bigos) or even Blueberry Pierogi served with sweet cream (only in the Summer).
